This time Hyderabad has been chosen as the second pit stop in the series of exquisite food festivals exploring royal cuisines along the magnificent culinary destinations of India. Dilli 32 at The Leela Ambience Convention Hotel is hosting an ongoing ‘Hyderabadi Food Festival’ – “Dine With The Maharaja” to make their patrons experience the culinary bliss of historic proportions from the royal kitchen of Hyderabad.
Hyderabad city is a princely legacy of Nizams of Hyderabad. The cuisine here is special because of the use of ingredients that are carefully chosen and cooked to the right degree and time. In Hyderabadi style of cooking , name is given to a dish according to the way it is cooked like Dum pukht Biryani or the spices used like Zafrani Pulao etc. The cuisine has been evolve from time to time and is an amalgamation of Mughal, Turkish, Arabic along with the influence of the native Telugu and Marathwada cuisines.
Chef Ashwani along with his extremely talented gourmet team has done a fabulous job. In terms of bringing the feel of Hyderabad city, the hotel has created a grand set up reflecting a mini Hyderabad itself within the hotel along with sumptuous food.
A huge buffet spread is laid at the frangipani area of the hotel having lot of live stations for soups, starters and breads etc. The gourmet journey started with Paya ka soup first which was like a great beginning indeed. Then starters like Nizami tawa murgh, Dum k kebab, Tala ghosht and Shikampoori kebab were definitely quite welcoming and scrumptious. Vulliguda pakodi and Aloo k garley were some great veg starters for sure.
In the mains, we relished Haleem, Kachhe ghosht ki biryani with bhoorani raita a lot. Apart from these two outstanding preparations we loved Royala iguru, Handi ka ghosht, Nehari and Bagharey baingan a lot and they are must try.
Fabulous food and courteous hospitality were giving the whole experience an another level. We had a perfect ending to the royal evening with delectable desserts like Khoobani ka meetha, Gil e firdaus, Double ka meetha, Shahi tukda and Khazoor ka halwa.
