The cuisine of Awadh region has been influenced by Mughlai cooking techniques and bears similarities to those of Central Asia, Kashmir, Punjab and Hyderabad. Kebabs, Qorma and Biryani forms the core delicacies of the cuisine.
Chef Hafeez Qureshi has curated specially the menu for the festival where he has tried to bring the best of the cuisine has to offer. The menu holds a balance of scrumptious veg and non-veg dishes both so that everyone is taken care of.
Silbatte ki Shammi and Kakori kebabs were really done brilliantly. Both of them were quite flavourful and tender. The spices were balanced and not over powering the notes of them.
Kham khatai and Paneer tawa tikka were delectable veg offering and again very nicely prepared. Kham khatai was basically the green Dal patty cooked with Chef special spices on tawa. Paneer tawa tikka was actually quite an interesting dish where the cottage cheese was stuffed with spiced mashed potatoes, shallow fried dry fruits and finished on tawa.
Gosht Shahi Nalli Qorma was the star dish of the whole menu. It was an extremely well executed dish. Right from the aromas coming out to the taste and texture of the dish, it was divine. The Mutton was slow cooked in its own juices along with the spices which made it very succulent. Awadhi Gosht Biryani along with burani raita is also a must try.
For those having sweet tooth “Shahi Tukda” is not to be missed at all.
