An insight to the Red Velvet Cake


During my quest for top ten desserts in Delhi, I found out a different kind of enthusiasm for Red Velvet among all the sweet tooth dominated foodies like me. This made me go deep in to the history of it.
Red Velvet was actually invented during the era of World War 2. It was majorly promoted as an invention of Lady Eaton in Canada. Originally, it was made using food color which was in-house product of Lady Eaton’s store along with butter milk. The interesting fact is that later the rationing of World War II, led to the inclusion of beet root to get the Red color to the cake. It was then followed by numerous modifications like icing it with cream cheese in place of the French style butter roux icing etc. which eventually gave us the today’s famous Red Velvet Cake.

So there are  a number of ways to prepare the Red Velvet Cake.

Some people just used the Vanilla sponge recipe with some red color accompanying with a regular Vanilla icing. Some go to such an extent that they make a nice Buttery red color sponge with Beet Root, Butter milk and Unsalted Butter iced with Cream Cheese frosting. Some just use white chocolate truffle as an icing. Can’t actually comment on authenticity of the recipe but my personal favorite is the Red color sponge with Beet Root extract along with Butter Milk, giving the velvet texture and cream cheese icing to enhance the flavor.



As claimed by New York city’s Famous WALDORF-ASTORIA Hotel, the original recipe was made well known in the United States by them and they even named the cake as Waldorf-Astoria cake. We can also find the following products made on the similar compositions and appearances. They are:-
